Luxurious Dark Chocolate Mousse

This was prepared as part of a three course meal for a dinner party, the complete menu for which I will cover in a later post. Light but indulgent, this delicious chilled dessert needs to be prepared several hours before serving (or the day before). 

Ingredients

300g dark chocolate

12 egg-whites

1/2 tablespoon lemon juice

80g caster sugar 

Notes: (1) Chocolate should as dark as possible, at least 60% cocoa (I used 85%); (2) This recipe serves 6 people, halve it for smaller servings. 

Instructions

Whisk the egg-whites and lemon juice until they form soft peaks. Use an electric whisk if you have one or you will hate yourself (alternatively, if you must use a hand whisk, draft a number of helpers to tag-in when your arm is exhausted). 

Whisk the sugar into the egg-whites until the mixture is firm and holds its shape. Be careful not to whisk beyond this point. 

Break the chocolate into small pieces and melt in the microwave (adding some water will help speed this up). 

Quickly whisk a third of the egg-whites into the melted chocolate, ensuring the two substances mix properly before the chocolate cools. Fold the remaining egg-whites into the mix and stir to combine. 

Pour the mousse mix into suitable containers and chill for at least 5 hours, or preferably overnight.
