8 Minute Microwave Cake

Warning: being able to make a cake from scratch in 8 minutes effectively means you can have cake in the time it takes light from the Sun to reach Earth, or, in other words, you can have cake whenever you feel like it. In the interests of staving off type-2 diabetes, please exercise self-control when it comes to this recipe. 


Ingredients

1/2 cup of self-raising flour

1/2 cup sugar

1 egg 

100g margarine/butter

Optional: strawberry jam / honey / golden syrup 

Notes: (1) Plain flour is fine, if using add a teaspoon of baking powder; (2) Any size egg is okay, the larger the better; (3) The ratio for the cake batter is 1:1:1:1 flour/sugar/butter + egg, this recipe serves 2, scale up accordingly. 

Instructions 

Heat the margarine briefly in a mixing bowl in the microwave to soften it; add the egg, sugar and flour and whisk to combine. 

Pour the cake batter into a microwave safe container, heat for approximately 3 minutes, until the cake has risen and is springy to the touch. Leave to stand for a minute and serve. 

Optional: before pouring in the batter, cover the bottom of the container in jam, honey or syrup and pour the batter on top; when you serve up-end the container and the surface of your cake should be nicely covered in your chosen condiment.
